Baby, It's Cold Outside

Brrrr.....it is cold. Nothing like being inside on a cold day, simmering some soup on the stove. The aroma alone just makes you feel warmer.

This soup recipe was given to me by Farmer Brown’s uncle. Not sure where he got the recipe, but we always refer to it as “Teddy Soup.” His uncle is the ultimate host. He cooks, and then insists on serving you, making your plate for you. While you eat, he hovers, checking that you have everything you need. And the best part, he cleans it all up, refusing help. Love a man in the kitchen, especially one that cleans it up.

This soup makes enough to feed an army. I usually make this and share with neighbors. It also freezes well, making it perfect to take to new mommas, in several small bowls to freeze and take out when they need it.

Teddy’s Soup (Vegetable Beef Soup)

¼ head of cabbage
3 large carrots, sliced
1 large pepper
3 sticks of celery
5 small potatoes
3 small onions
2 cans of lima beans, undrained
2 cans of corn, undrained
1 can of peas, undrained
1 lb. hamburger
1 pkg. sirloin beef tips
1 stick of butter
½ gallon of tomato juice
2 small cans of tomato paste

In a large stockpot,
combine the first nine ingredients, chopped and diced to your liking.
Fill the pot with water until the vegetables are floating. Then, pinch the raw hamburger into pot. Then, add the sirloin tips cut into bite-sized pieces and the stick of butter. Cook for 1 ½ hours. Then, add the tomato juice and the tomato paste. Simmer for 1 hour.
